Taco Salad

1 Tbsp olive oil

½ white onion, diced

1 garlic clove, minced

1 lb ground beef

1 small packet taco seasoning (or 1 ½ tsp chili powder & 1 ½ tsp cumin)

2 heads romaine lettuce, chopped

½ cup shredded Mexican cheese

¼ cup salsa

¼ cup sour cream

1 avocado, quartered and sliced

4 lime wedges

Heat olive oil in large skillet.  Add onion and garlic and saute for 5-7 minutes till the onion is softened.  Add ground beef and cook for 7-10 minutes till browned.  Season with taco seasoning.  Drain & set aside.  Assemble the salads in 4 bowls.  Start with lettuce.  Top with seasoned ground beef.  Sprinkle with cheese and add salsa, sour cream and sliced avocado and serve with lime wedge.
