Roasted Broccoli

1 bunch broccoli, cut into florets (may also used frozen broccoli florets)

2 Tbsp, butter

1 tsp salt

Pepper to taste

Preheat oven to 450 degrees.  Toss the broccoli florets in melted butter, salt & pepper on a baking sheet.  Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.

Makes 4 servings (1 serving = 1 cup)

Each equals; 1 veggie, 1 fat
