Slow Cooker Curry Coconut Chicken

16 oz boneless, skinless chicken
Non stick cooking spray
2 cups almond & Coconut Milk (40 calorie blend)
1 package Gold Premium Chicken soup
1/2 cup Brown Rice (uncooked)
1/2 bunch Green Onion-chopped
2 tbsp Curry Powder, Jamaican Style
1 tbsp Turmeric
2 tbsp Soy Sauce
2 tbsp Apple Cider Vinegar
2 tbsp Sugar Substitute
1 tbsp Minced Garlic
1 tbsp ground ginger
1 tbsp Bay Leaf
1/2 tbsp Salt, Iodized
1/2 tbsp Black Pepper

Each seving = 4 Proteins, 1 starch & 1 dairy

Whisk together chicken soup & almond milk till dissolved. Brown the chicken in a hot skillet sprayed with non stick cooking spray,. Place all ingredients in the slow cooker and mix well.
Cook on high for 4 to 5 hours.
