Mexican Breakfast Bowl

1 Tbsp butter

1 cup sausage

4 large eggs

2 Tbsp heavy whipping cream

½ cup shredded Mexican blend cheese

1 avocado, pitted, peeled & sliced

¼ cup sour cream

1 Tbsp chopped cilantro

Melt butter in skillet over medium-high heat.  Add sausage and cook till crisped, about 5 minutes.  In a small bowl, whisk eggs and heavy cream and season with salt & pepper.  Remove sausage from skillet and divide between two bowls.  Push it to ½ of the bowl, leaving room for the scrambled eggs.  

Reduce the heat to medium and scramble the egg mixture till desired doneness.  Divide the eggs between the two bowls.  

Add the cheese, avocado slices, sour cream and cilantro. 

Serves two   Each equals 4 protein, 2 fat
