Stuffed Pitas

These stuffed pitas are an easy make ahead lunch with big flavor and little effort.

1 lb. lean ground turkey or white meat
1 Tbsp chopped fresh parsley
1 ½ Tbsp low-sodium soy sauce
½ cup chopped green onions
1 Tbsp & 1 tsp butter
1 cup sliced fresh mushrooms
2 6-inch whole grain pitas, cut in half into 4 pieces

Mix turkey, parsley, soy sauce and onions in a large bowl. Shape into 4 4-inch patties. Melt butter in a skillet over medium heat. Add mushrooms. Cook and stir for 2 minutes or till tender. Remove mushrooms. Cover to keep warm. Add turkey patties to skillet. Cook on medium heat 6 to 7 minutes each side or till cooked through. Serve in ½ pita with some mushrooms. (Turkey can be substituted with lean beef)
Serves 4 (one pita) =3 protein, 1 starch, 1 fat
