1 cup corn, cooked
2 cups tomato, chopped
½ cup fresh cilantro, minced
¼ cup red onion, finely chopped
1 tsp white vinegar
Combine all ingredients; marinate for 30 minutes before serving. Serve on top of chicken, beef or fish.
