Balsamic Chicken

This dish is full of flavor thanks to the balanced combination of sweet and savory.

1 ½ cups Belgian endive
1 ½ cps radicchio lettuce
2 cups green leaf lettuce
1 cup spinach leaves
3 Tbsp canola oil
4 cloves garlic, minced
3 scallions, diced
2 lbs. boneless skinless chicken breast, thinly sliced
5 Tbsps balsamic vinegar
2 Tbsps Dijon mustard
¼ cup fresh basil

Wash and tear the greens into small pieces and arrange in a large salad bowl or on individual plates. Heat a large skillet over medium heat. Add the canola oil and heat until very hot. Ad the garlic and scallions and sit-fry for 2 minutes. Add the chicken in small batches and quickly brown. Reserve browned chicken on a plate. Return the chicken to the skillet and add vinegar and mustard. Cook the mixture or 3-4 minutes more till chicken cooked through. Add basil. Toss the chicken mix and spoon onto the prepared leaves.
Serves 6 = 4 protein, 1 fat, 1 vegetable
