It doesn’t require an oven. It’s super fast to throw together. It’s wonderfully light and refreshing. It has the perfect amount of crunch and sweetness and flavor.

3 cups (1 lbs.) chicken breast, cooked, cut into chunky pieces
20 oz. (2 cups) canned pineapple chunks, in natural juice, drained
11 oz. (1 cup) mandarin oranges, drained
¼ cup fat-free raspberry vinaigrette salad dressing

Toss chicken, pineapple, and oranges together lightly. Gently mix salad dressing with chicken mixture. Chill till read to serve. Can be served over mixed greens
If so desired.
Serves 6 (1 cup) = 3 protein, 1 fruit, 1 additional
