You would be so surprised how similar this healthy cauliflower potato salad tastes like the real potato salad!
1 medium head cauliflower, broken into small florets
¼ cup reduced-fat mayonnaise
2 Tbsp lemon juice
2 packets sugar substitute
½ tsp dried mustard
3 green onions, chopped
2 Tbsp chopped green pepper
Pepper to taste
Cook cauliflower in a large pot of boiling water or 10 minutes or till tender. Drain and rinse under cold water. Pat dry. In a large bowl, mix mayonnaise, lemon juice, sugar substitute and mustard. Add cauliflower, green onions, ad green pepper. Mix well till evenly coated. Add pepper to taste.
Serves 6 – 1 serving (1 cup) = 1 veggie, ½ fat
