Enjoy seasonal veggies in the best way: with Fresh Corn Salsa! Eat this corn salsa with chips or topped over steak or chicken. Either way, you can't lose!

1 cup corn, cooked
2 cups tomato, chopped
½ cup fresh cilantro, minced
¼ cup red onion, finely chopped
1 tsp white vinegar

Combine all ingredients; marinate for 30 minutes before serving. Serve on top of chicken, beef or fish.
½ cup = 1 starch, 1 vegetable
