Flank Steak Salad

¼ cup plus 2 Tbsp olive oil, divided

12 oz. flank steak

6 cups fresh spinach

2 avocados, cubed

4 o. feta cheese, crumbled

Juice of 1 lemon

Set broiler to high.  Rub 2 Tbsp of olive oil all over steak & season.  Place steak on a broiler pan and cook under broiler till your desired doneness (3 to 4 min per side for med rare).  Let rest for 5-10 min  In a salad bowl, toss spinach, avocado & feta cheese.  Add ¼ cup olive oil & lemon juice & toss.  Divide evenly for 4 servings.  Slice steak & place on top of salad.
