1 lb. cooked chicken breast, chopped
½ cup full-fat mayo
½ celery stalk, diced
1 scallion, green parts only
½ cucumber, finely diced
2 Tbsp chopped dill
2 Tbsp lemon juice
In a large bowl, combine chicken, celery, scallion and cucumber. Mix together mayonnaise, chopped dill, lemon juice and season with salt & pepper as desired.
Pour over chicken mixture and coat evenly.
