Cauliflower Rice

5 cups chopped cauliflower

2 tsp olive oil

1 tsp minced garlic – 2 Tbsp water

Finely chop cauliflower.  Heat olive oil in large skillet & saute garlic-add cauliflower & water

Cover skillet & steam cauliflower till crisp, about 2 min.  Serves 4 – equals 1 veggie, 2 fat
