Beef Stroganoff

1 lb ground beef

1 Tbsp butter

1 yellow onion, diced

2 cups mushrooms, sliced

2 minced garlic cloves

1 cup beef broth

1 cup sour cream

Cook the ground beef in a large skillet over medium-high heat, stirring and breaking up until cooked through, 7-10 minutes.  Drain the fat & transfer the meat to another dish.  In the same skillet melt the butter and saute the onion, mushrooms & garlic until tender, about 5-7 minutes.  Add the broth, browned beef, and sour cream to the skillet and cook, stirring, till the sauce is combined and thickened, about 3-5 minutes.  Serve hot.

Serves 4      Each equals  5 protein, 1 vegetable portion, 2 fats
