Baked Eggs in Avocado

 

 

1 ripe avocado, pitted

2 eggs

Salt

Hot sauce (optional)

Preheat oven to 425 degrees.  Scoop out 1 or 2 Tbsp of avocado and set aside for another recipe.  Place the scooped avocado halves in a small baking dish.  Carefully crack 1 egg into each half. Season with salt & pepper.  Bake for 15-20 minutes or till whites are set and yolks are cooked to your liking.  Sprinkle with hot sauce of desired.

Makes 1 serving
